Gin began its life as a medicinal liquor made by monks in Italy, who were swiftly followed by other monks and alchemists across Europe, particularly Southern France, Flanders and the Netherlands – where gin is often incorrectly believed to have been invented, to provide Aqua Vita rom distillates of grapes and grains.
It then became an object of commerce in the spirits industry. Gin emerged in England after the introduction of the Jenever, a Dutch and Belgian liquor which originally had been a medicine. Although this development had been taking place since early 17th century, gin became widespread after the William of Orange led 1688 Glorious Revolution and subsequent import restrictions on French brandy.
Gin today is produced in subtly different ways, from a wide range of herbal ingredients, giving rise to a number of distinct styles and brands. After juniper, gin tends to be flavoured with botanical/herbal, spice, floral or fruit-flavours or often a combination. It is most commonly consumed mixed with tonic water. Gin is also often used as a base spirit to produce flavoured gin-based liqueurs such as, for example, Sloe Gin traditionally by the addition of fruit, flavourings and sugar.
York Gin’s Old Tom is the tasty result of a collaboration with the Yorkshire Michelin-starred restaurant Star Inn, Harome. The slightly sweeter flavour comes from a Yorkshire sugar syrup exclusively developed for this gin, it’s main ingredient white alba rose, native to Yorkshire hedgerows and famous for being the rose on the Yorkshire flag. Other ingredients include bronze fennel, star anise, angelica and pink peppercorns.
It looks like York Gin was almost destined to create an Old Tom expression, what with the cat on the label, and the history of tom cat-shaped plaques outside London gin houses, where you’d put a coin in the cat’s mouth and a shot of gin would appear out of the cat’s paw.

Whitley Neill is a London dry gin made in England but inspired by Africa. Created by Johnny Neill, who has 5 generations of alcohol distilling experience with his family owning the Whitley distillery dating back to 1762. Johnny had always wanted to create his own product range and it wasn’t until he was inspired by his wife to put a new spin on the gin world. Having a strong connection with his wife’s homeland of Africa, Johnny wanted to put the essence of Africa in his gin.
The Baobab tree is known as the tree of life, bearing fresh fruit that when distilled in gin, gives a real taste and experience of Africa. The Baobab fruit brings a balance to the flavours of the other 8 botanicals including the other Botanical that is from Africa, the Cape gooseberry. These are the two botanicals that bring the essence of Africa to the gin and the other 7 are your usual suspects, Juniper berries, Coriander seeds, angelica root, lemon peel, orange peel, cassia bark, Florentine iris (orris root).
Although the botanicals used are blended to bring the spirit of Africa to the gin, the distillation and blending method is English. The blending of the botanicals is done using 100% grain spirit and only the purest water. The method used is Batch distillation which takes place in a small copper pot still and it is only produced in small batches.
Since the release of this African inspired gin, it has won double gold medal at the San Francisco World Spirits Competition in 2007 and a gold medal for ‘Best in Class’ international wine & spirits competition 2007.

We use less quinine in our Mediterranean Tonic which, with the addition of rosemary and lemon thyme, produces a much lighter, more fragrant tonic.

There are 10 different botanicals used to create Bombay Sapphire. Although they don’t hind the 10 magical ingredients from the customers, they do hind the amount of each botanic they use in their special blend. The ten botanicals are from all around the world including; Spanish almonds are grounded to release there precious oils and adds a clean rich taste with a hint of nuttiness to add strength to the spirit. Grains of paradise from West Africa combine a peppery bite with lavender and chocolate for a touch of luxury which adds the spicy exotic quality to the spirit.
Lemon peel from Spain creates a bittersweet taste which has a freshness and subtlety giving a clear citrus taste. Liquorish from China to bring depth to the other botanicals. Juniper berries from Italy give a scent and taste of pine cones, lavender and camphor. Orris routes from Italy add the aroma of violets and add the sense of warm earth combining the rest of the botanicals. The Angelica plant from Saxony gives a dry, pine, kernel flavour enhancing subtlety and adding a long after taste.
Coriander seeds from Morocco are ground down to release there citrus and spice giving suggestions of lemons and orange but mellowed and rounded by a ginger-like spice. Cassia bark from Indo-China give off a light cinnamon flavour adding a warm spice and touch of sweetness and Cubeb berries from Java are crushed and when infused in a spirit provide a fresh pine flavour and light peppery notes. Bombay Sapphire Gin has a ripe citrus aroma with rounded spice and a touch of juniper.

1. Dehydrated citrus holds aromatics more effectively
When you strip the water out of anything, it usually intensifies the remaining ingredients. Garnishes are no different. Aroma and taste comes across as a more concentrated & intensified experience.
For the gin & cocktail purists, you can be rest assured that a customer won’t squeeze a wheel or wedge of lemon or lime into their cocktail, throwing out the balance you’ve worked so hard to create.
2. They look beautiful
Ever heard the expression ‘people drink with their eyes’? It’s true – the better your drinks look, the more you will enjoy them.
Again, using citrus as an example, the dehydration process darkens the fruit itself quite significantly. This can provide a dramatic, intriguing contrast against your drinks, allowing you to play with colour combinations created.
3. Practicality & waste reduction
That’s right, instead of cutting and peeling you get to reach, grab, and elegantly place on top.
The use of fresh fruit as a drink garnish usually results in waste. It is rare that each individual piece is used and what is left is never quite big enough to juice, or to turn into another garnish.
Dehydrated garnishes are a way of providing a positive path of least resistance, whilst also eliminating waste. They are ready to go as soon as the alcohol and mixer are poured over ice and only require sealed storage to stay fresh for at least 3 months after first being opened.
